* 2 medium, ripe tomatoes, peeled
* 1 tablespoon red wine vinegar
* 2-inch piece of cucumber, peeled
* 1 tablespoon olive oil
* 1 green bell pepper
* 2 scallions
* 1/4 teaspoon dried mint
* 1/2 teaspoon paprika
* 1/2 teaspoon black pepper, freshly ground
* 1/2 teaspoon salt
Directions
Remove the seeds of the tomatoes, cucumber and pepper. Chop vegetables into very fine pieces, using a sharp knife or a mini-food processor. Drain excess liquid. Add remaining ingredients and mix well. Make a few hours ahead for fuller flavor.
