1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup butter, cubed
4 cups cooked turkey breast, cut into bite-sized pieces
1 pound frozen broccoli florets, thawed
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (10 3/4 ounce) can condensed cream of chicken soup
1 cup cooked rice
1/2 cup shredded part-skim mozzarella cheese
1 (2.8 ounce) can french-fried onions
Preparation method:
Preheat oven to 350 degrees F and coat a 2 1/2 quart shallow baking pan with nonstick cooking spray.
Melt butter in a large skillet over medium heat. Cook onion and celery in melted butter for about 6 minutes to soften, then add turkey, broccoli, cans of soup, and rice. Pour into prepared baking dish.
Bake for 25 minutes to heat through, then top with cheese and onions and bake for 5 more minutes to melt cheese.
