2 tablespoons butter
1 celery rib, chopped
1/4 cup chopped onion
1 cup coarsely crumbled corn bread
1 cup cubed day-old bread
2 tablespoons chicken broth
1/4 teaspoon poultry seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
Gravy:
1/4 cup butter, cubed
1/4 cup flour
1/4 teaspoon salt
1 cup chicken broth
1/4 cup milk
1 egg
1 1/2 cups cubed cooked turkey
Preparation method:
Preheat oven to 350 degrees F and coat an 11x7-inch baking dish with nonstick cooking spray.
Melt 2 tablespoons butter in a skillet over medium heat. Cook celery and onion in melted butter for about 6 minutes to soften, then, in a large bowl, toss vegetables with cornbread, bread cubes, chicken broth, poultry seasoning, salt, and pepper.
Pour bread mixture into the prepared baking dish.
Melt 1/4 cup butter in a saucepan over medium heat. Add flour and salt; whisk, cooking for 2 minutes, until smooth. Slowly pour in chicken broth and milk. Let the sauce come to a boil, then simmer on low heat for 2 minutes to thicken.
Crack the egg into a small bowl. Spoon some of the thickened sauce into the egg and whisk, then pour the mixture into the saucepan. Bring back to a boil and simmer for 2 minutes.
Pour half of the gravy into the baking dish, top with turkey, and then pour the rest of the gravy on top. Cover with aluminum foil.
