1/4 cup sugar
1/4 cup red wine vinegar
1 red onion, thinly sliced
8 ounces cream cheese, softened
2 chipotle chiles in adobo sauce, finely chopped
1 teaspoon adobo sauce
4 kaiser rolls, split and toasted
1 cup shredded cabbage
5 radishes, grated
1 1/4 pounds deli-sliced roast turkey
Preparation method
Combine sugar and vinegar in a saucepan set over medium heat. Cook onion in hot vinegar for about 3 minutes, then turn off heat, put a lid on the saucepan, and let stand for about 30 minutes or until cool.
Mix cream cheese with chipotles, adobo sauce, and 3 tablespoons of the vinegar from the saucepan. Spread inside the kaiser rolls.
Fill rolls with cabbage, radish, turkey, and onions. Serve.
