1 pound fresh spinach, washed, dried, chilled
8 slices bacon, diced
1 tablespoon brown sugar
1/3 cup sliced green onions
salt, to taste
3 tablespoons vinegar
1/4 teaspoon dry mustard
Preparation:
In a heavy skillet, fry diced bacon until crisp. Reduce heat; add sugar, onions, salt, vinegar, and dry mustard; bring to a boil. Pour the hot mixture over spinach. Toss lightly and serve.
