Cranberry Polenta Cookies

    Ingredients:

    ¼ cup Egg Replacer
    ¼ cup warm water
    1 cup garbanzo bean flour
    ½ cup polenta
    1/4 t. salt
    1 cup dried cranberries
    ½ cup (1 stick) dairy-free soy margarine
    ½ cup sugar
    ¼ cup almond milk
    ½ t. almond extract

    Preparation:

    1. Preheat the oven to 375 F. Line a baking sheet with parchment paper and set aside.

    2. In a small bowl or cup, mix together the Egg Replacer powder with the warm water until gooey. In another bowl, sift together the garbanzo bean flour, polenta and salt. Stir in the dried cranberries. Set aside.

    3. In another medium-sized mixing bowl using an electric hand mixer set on a medium speed setting, beat the soy margarine with the sugar until fluffy. Add the polenta-four mixture, beating until the mixture is crumbly. Add the almond milk, almond extract and Egg Replacer and beat until the mixture holds together. Place the bowl, uncovered in the freezer for 20 minutes.

    4. Roll the dough into 1-2” balls and place each on the prepared baking sheet. With a fork or your fingers, flatten each of the balls slightly. Bake for 15-20 minutes, or until golden brown.
